Founded in 1702 in Mizunami, Gifu, Nakashima Shuzo is a historic brewery with over three centuries of craftsmanship. Using soft, mineral-rich mountain water, the brewery produces sake that emphasises balance, texture, and a clear expression of rice.

Best known for its Kozaemon label, Nakashima Shuzo focuses on umakuchi styles—fragrant, rounded, and layered with umami—crafted to complement food rather than overpower it.
